Roti (Paratha)

Roti or Paratha (or various other names) is a type of Indian flatbread. It is soooo good y'all and surprisingly easy! Slightly...and I mean very slightly time-consuming, but still easy! So buttery and flaky and I actually love to make it with Mediterranean food!
Think of roti as if a croissant and pita had a baby. Perfect right?
Okay so here is the recipe I use and I HIGHLY recommend y'all giving it a try!


Ingredients:

- 3 cups all purpose flour
-1 teaspoon granulated sugar
-2 teaspoons baking powder
-1 1/2 teaspoons salt
-1 tablespoon butter melted
-1 - 1 1/2 cups warm water
-1/4-1/2 cup softened/melted butter to spread between layers
-1/4 cup melted butter/olive oil for basting

Directions:

-Mix the flour, sugar, baking powder, salt, butter, and 1 cup of water into a dough, if too dry add a bit more water as needed until a not-too-firm but not-too-soft dough forms
-knead until you have a ball
-divide the dough into 6 pieces, cover, and set aside for 30 mins.
-after 30 mins. you roll each piece into a circle shape. it doesn't have to be perfect, but a decent circle and pretty thin.
-rub butter on it, about 1 tablespoon or so til it's well buttery.
-sprinkle with a light dusting of flour
-cut a cut from the middle of the circle to the edge and form a rounded cone shape by rolling from one side of the cut allllll the way around til you rolled all the dough ball into a cone
-stick your finger into the center of the cone so all the edges are smooshed inside the center and it forms like a little cone/dome shape with a little indent in the center
-put them in a lightly oiled dish, cover with plastic wrap, and let rest for 2+ hours. I refrigerate mine all-day
-when ready to cook, roll each dough ball into a circle...not thin necessarily, but like cooked pancake size thickness
-cook in a buttered/oiled cast iron skillet over medium until golden brown
-baste with butter/oil on each side as you flip and cook
-repeat with the remaining dough and Enjoy!!!
